I know google say we do not have to charge them VAT on AdSense earnings,

Adsense earnings are paid by Google Inc, a US corporation. VAT is something you charge to VAT-applicable entities within the EU.
Seriously, if there were VAT to pay on Adsense, I'm pretty sure HMRC would have taken up the issue by now.

Dragging up a real old post here,
But with AdSense now being moved to google ireland . I had another look at the VAT question and it appears to have changed. I'm pretty sure it used to say we don't pay VAT on AdSense earnings. It now says "you should not" which implies a bit of doubt. So back to my original question. What will happen if Google have been wrong all this time?

If Google have been wrong all of this time, it'll be Google that needs to pay I think.
I don't think that will happen, though - while there is a Google Ireland, I think Adwords/Adsense is ring fenced into US operations, so overseas taxes won't complicate matters. That's my opinion, anyway.
